Cupcake Days. . .





One of my sweet childhood memories occured about this time each year. Each spring, my momma would make her jellybean cupcakes. She would ice the cakes and then cover them with coconut she had dyed green and then put jellybean eggs on top. She would then come to my classroom at Sunset Elementary and bring cupcakes for everyone in my class. I was always so proud of my mother and thought her cupcakes were the most wonderful thing ever. The older I become the more joy I receive from these happy times and happy memories. Thank you, sweet friends, for coming by and letting me share my memories with you. I hope each of you are experiencing the promises that spring and Easter bring.

Ooohh I soo remeber these as well .. I would make them with my children at Easter time .. Sweet memories .. you are right !! I am so happy that you shared these, I might just have to make some up for Sunday !! wouldn't they all be surprised ?! I really like how you did them in the pastel colors too, this would be su fun !! I love these cupcakes. They are absolutely beautiful. The green dye on the coconut with the little jelly bean eggs. Love the chicks too. I love them. I can smell the coconut and would just love to reach in and take one. Heck, I believe I will. Thank you for sharing. Oh yummy is all I can say. So yummy.

What a sweet memory :) Those cupcakes look so yummy. I don't really make cupcakes, as my kides were not too much into them, and now that they are older, they don't really eat much cake & such. Hubby doesn't at all. He's more an ice cream eater.

Oh Vicki, once again our childhood memories are so alike... my mama always made little coconut cupcakes too! I waited all year for these precious little treats, and helping her make them was so much fun... you are right, the older we get the sweeter our memories from our childhood become... now I think I want to make some today, for Jack and I... and pretend I am ten years old once again... Lovely! Cupcakes are yummy! My Grandmother used to make us a coconut bunny cake! I really didn't like it but it wasn't Easter without it!

This story reminds me of my Gram, she used to make similar cupcakes every Easter for all of us Grands.

You brought back wonderful memories. There was always someone in the family, my mom, my mother-in-law, my husband's aunt would make these cupcakes. When I was growing up, we got to put the jelly beans on them. My husband always wanted the black jelly beans if he was helping when we made them here at home, I love the picture that was in your post. Thank you for sharing.

Vicki I loved reading your sweet Easter memory. I imagine that all the children in your class loved your mom as well for taking the time to make them all feel special with her pretty cupcakes. What a dear memory to have and keep of your mother. I am sure you are making many memories with your darling grandchildren. Many of which will be expressed in years to come. Maybe even on blogs of their own.

Vicki, what a sweet childhood memory...your mom's cupcakes sound delicious...i remember how excited my boys would be when they were in grade school and i would bring cupcakes to school for their birthday...thanks for reminding me of those sweet memories of mine:)
